Marinade Ingredients

  • Chicken thigh 900 g
  • Grated onion 30 g
  • Cooking sake 1 tbsp
  • Yuzu kosho 1 tsp
  • Sugar 1/2 tsp (~3 g)
  • Sesame oil 2 tsp
  • Egg 1 1/2 tbsp (beaten)

Coating Ingredients

  • All-purpose flour 4 tbsp
  • Cornstarch 2 tbsp (2:1 ratio, total 6 tbsp)

Mayo Sauce Ingredients

  • Minced onion 1 tbsp
  • Mayonnaise 6 tbsp
  • Chilsung Cider 3 tbsp
  • Lemon juice 1 tbsp
  • Sugar 1 tbsp

Personal Notes

  • Could increase the marinade slightly next time.
  • Retry using rice flour instead of all-purpose flour.
  • For the mayo sauce, maybe add finely chopped cheongyang chili.
