Soy Sauce Coating Ingredients

  • Minced ginger 1/2 tbsp
  • Minced garlic 1 tbsp
  • Cooking sake 1/2 tbsp
  • Soy Sauce 1/2 tbsp
  • Oil 1 tbsp
  • Mirin 1/2 tbsp
  • Egg 1 tbsp (beaten)

Coating ingredients

  • All-purpose flour 4 tbsp
  • Cornstarch 2 tbsp (2:1 ratio, total 6 tbsp)

Yuzu Kosho Coating Ingredients

  • Chicken thigh
  • Grated onion 30 g
  • Cooking sake 1 tbsp
  • Yuzu kosho 1 1/2 tbsp
  • Sesame oil 2 tsp
  • Egg 1 1/2 tbsp (beaten)

Coating ingredients

  • All-purpose flour 4 tbsp
  • Cornstarch 2 tbsp (2:1 ratio, total 6 tbsp)

Personal Notes

I think I need to make the coating a bit saltier; the flavor intensity drops by about 20–25% after deep frying, even though it tastes fine beforehand.
